Sound Cards? Mac/PC?

Hi, all. I am going to be building a new computer specifically for recording. What sound cards are the best?

Also, there's the whole issue of Mac vs. PC computers. People say to go with Macs because they're easier. I've built PCs from the ground up, and I've written software and I'm not intimidated by a PC at all. Quite the contrary, actually. I'm probably a little nervous to try to use a Mac! I guess what I'm trying to say is this: Are Macs better than PCs in anyway, or just easier? Does it matter if I get a PC or Mac?
